  • 7 cups sugar
  • ¼ cup freshly squeezed lemon juice
  • 1 tablespoon butter
  • 1 package Liquid Certo Pectin

  1. Sterilize jars, lids, and rings by boiling them in water.
  2. Juice mandarins and lemons, removing seeds.
  3. In a large heavy-bottomed pan, combine mandarin juice, sugar, and butter over high heat until sugar dissolves.
  4. Bring to a rolling boil for 1 minute while stirring constantly.
  5. Add pectin and boil hard for an additional minute before removing from heat.
  6. Ladle hot jelly into sterilized jars, leaving about ¼ inch headspace.
  7. Seal jars tightly with lids and process in a hot water bath for 10 minutes.
