  • 4 whole fish fillets (snapper or cod)
  • Salt and black pepper
  • 2 tablespoons olive oil
  • 1 onion (sliced)
  • 1 bell pepper (sliced)
  • 1 zucchini (sliced)
  • 3 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 1 lemon (zested and juiced)
  • 1/4 cup fresh parsley (chopped)
  • 1 tablespoon fresh dill (chopped)
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
  3. Season the fish fillets with salt, black pepper, and dried oregano.
  4. In a skillet over medium heat, sauté onions in olive oil until translucent, about 5 minutes. Add bell pepper and zucchini; cook until tender. Stir in garlic and cook for another minute.
  5. Spread the sautéed vegetables in the prepared baking dish. Place fish fillets on top, then scatter cherry tomatoes, parsley, dill, lemon juice, and zest over them.
  6. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 5-10 minutes until the fish flakes easily with a fork.
  7. Let cool slightly before serving with optional lemon wedges.
