  • 16 ounces cremini mushrooms
  • 1 cup cooked pinto or black beans
  • ½ cup raw walnuts
  • 1¼ cups cooked pearled barley
  • 1 small onion
  • 3 cloves garlic
  • 2 tablespoons vegan Worcestershire sauce
  • ½ cup panko breadcrumbs

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Sauté chopped onion and sliced mushrooms in a large pan over medium-low heat until most liquid evaporates (about 15 minutes). Add minced garlic, thyme, and smoked paprika; cook for an additional 2-3 minutes.
  3. In a food processor, pulse walnuts until coarsely crumbled. Combine sautéed vegetables, barley, beans, nutritional yeast, Worcestershire sauce, breadcrumbs, salt, and pepper; blend until mixed but chunky.
  4. Form patties using about ½ cup of the mixture each (yields around 8 burgers). Bake on the prepared sheet for 30-35 minutes or pan-sear in a skillet for about 5 minutes per side.
