  • ½ cup cornstarch
  • 1 teaspoon cayenne

  • 1 teaspoon black pepper
  • ½ cup frying oil
  • 1 tablespoon brown sugar
  • 1 tablespoon cayenne powder
  • ½ teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 4 burger buns

Instructions

  1. Slice chicken breasts in half horizontally to form thin cutlets. Season with salt and pepper.
  2. Whisk buttermilk and hot sauce in one bowl; mix flour, cornstarch, and spices in another.
  3. Dredge chicken in the flour mixture, dip in buttermilk mixture, then coat again with the flour.
  4. Heat oil in a pan to 350ºF and fry cutlets for about 3 minutes per side until crispy.
  5. Make Nashville hot sauce by combining hot oil with brown sugar and spices; baste fried chicken while hot.
