  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/4 cup + 2 tbsp natural unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 3/4 tsp vanilla extract
  • 8 oz cream cheese
  • 4 tsp strawberry extract
  • 8 oz Cool Whip (or homemade whipped cream)
  • 2 tsp vanilla bean paste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, cocoa powder, and baking soda. Mix in the egg, buttermilk, vegetable oil, vanilla extract, and boiling water until smooth.
  3. Divide the batter into greased round cake pans and bake for 30–35 minutes until a toothpick comes out clean. Allow cooling completely.
  4. For the strawberry layer, blend cream cheese with sugar and milk; stir in strawberry extract and food coloring before folding in half of the Cool Whip.
  5. For the vanilla layer, repeat using vanilla bean paste instead of strawberry extract.
  6. Assemble the cake by layering chocolate cake with strawberry mixture and another chocolate layer topped with vanilla mixture and remaining Cool Whip.
  7. Refrigerate for at least an hour before serving.
