  • 2 1/2 cups sugar
  • 1/4 cup lemon juice

Instructions

  1. Prepare the nectarines by chopping them without peeling. Toss in lemon juice and mix with sugar. Cover and refrigerate for at least 4 hours or overnight.
  2. Transfer the mixture to a deep stock pot or Dutch oven, ensuring it fills no more than halfway.
  3. Bring to a boil over high heat while stirring continuously until it reaches its set point (220°F).
  4. Ladle into sterilized jars, leaving about 1/4 inch headspace. If canning, process in a water bath for 10 minutes.
  5. Allow jars to cool and check seals after 24 hours.
