  • ½ lb lean ground beef
  • ½ cup yellow onion, chopped
  • 3 garlic cloves, minced
  • 3 cups fresh baby spinach
  • 7 cups beef or chicken broth
  • 910 uncooked lasagna noodles, broken into pieces
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded parmesan cheese
  • 1 cup fresh ricotta cheese

Instructions

  1. In a large dutch oven, brown the ground beef over medium-high heat for about 8-10 minutes. Drain excess grease if necessary.
  2. Add chopped onions and sauté for approximately 5 minutes until translucent. Stir in minced garlic and let it cook for an additional minute.
  3. Mix in tomato paste, red pasta sauce, broth, spices, and the browned meat. Bring to a simmer.
  4. Incorporate broken lasagna noodles and cover; simmer for about 20 minutes until noodles are al dente. Add spinach towards the end to wilt it.
  5. Stir in parmesan cheese and serve topped with ricotta-mozzarella mix.
