  • 12 ounces linguine or fettuccine
  • 1/2 pound medium shrimp, peeled and deveined
  • 1/2 pound boneless, skinless chicken breast, cut into pieces
  • 1/2 pound Andouille sausage, sliced
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small yellow onion, sliced
  • Cajun seasoning

Instructions

  1. Boil pasta in salted water until al dente; reserve some pasta water before draining.
  2. Season shrimp and chicken with Cajun seasoning. Sear chicken in a skillet until golden; set aside.
  3. Cook shrimp until pink; remove from skillet.
  4. Brown Andouille sausage in the same skillet; set aside.
  5. Sauté bell peppers and onion until softened; add garlic and cook briefly.
  6. Create a roux with butter and flour in the skillet; gradually whisk in chicken broth and cream until smooth.
  7. Stir in cheeses and seasonings; combine proteins and veggies back into the sauce.
  8. Toss the cooked pasta into the mixture; adjust consistency with reserved pasta water if needed.
  9. Serve hot garnished with parsley and green onions.
