  • 10 oz dry Barilla Penne Pasta
  • 1/4 cup olive oil
  • 1/2 medium red onion (sliced)
  • 1 large carrot (sliced into matchsticks)
  • 2 cups broccoli florets (cut into matchsticks)
  • 1 medium red bell pepper (sliced into matchsticks)
  • 1 medium yellow squash (quartered)
  • 1 medium zucchini (quartered)
  • 34 cloves garlic (minced)
  • 1 cup grape tomatoes (halved)
  • 2 tsp dried Italian seasoning
  • Fresh lemon juice
  • Chopped fresh parsley for finishing touches

Instructions

  1. Cook the penne pasta in salted boiling water according to package directions. Reserve 1/2 cup of pasta water before draining.
  2. In a deep skillet, heat olive oil over medium-high heat. Sauté red onion and carrot for 2 minutes.
  3. Add broccoli and bell pepper; cook for another 2 minutes. Then add squash and zucchini; sauté until all vegetables are tender.
  4. Stir in minced garlic, grape tomatoes, and Italian seasoning; cook for an additional 2 minutes.
  5. Combine cooked pasta with the vegetable mixture, adding reserved pasta water as needed. Finish with lemon juice, parsley, and parmesan cheese.
