  • 8oz (220 grams) pasta
  • 1 Tbsp olive oil
  • 3 garlic cloves, minced
  • 9oz (250 grams) cherry tomatoes, halved
  • 5oz (150 grams) baby spinach
  • ¼ heaped cup (30 grams) grated parmesan cheese

Instructions

  1. In a large pot, bring water to a boil. Cook the pasta according to package directions until al dente. Reserve ½ cup of cooking water then drain.
  2. In a skillet over medium-low heat, warm olive oil and add minced garlic. Sauté until fragrant (about 45-60 seconds).
  3. Add halved cherry tomatoes, basil, salt, and pepper to the skillet. Stir occasionally until the tomatoes burst and release their juices.
  4. Mix in spinach until wilted but bright green (a couple of minutes).
  5. Stir in cooked pasta and parmesan cheese along with reserved pasta water until combined.
  6. Plate immediately with extra parmesan cheese, cracked pepper, and a drizzle of olive oil.
