  • 6 Persian cucumbers or 2 English cucumbers
  • 6 medium Roma tomatoes
  • 1 small red onion
  • Juice of 3 small Persian limes or 1 large lemon (about 5 tbsp)
  • 2 tbsp dried mint
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Vegetables: Peel and finely chop the red onion. Cut the cucumbers lengthwise into quarters and chop finely. Halve each Roma tomato, remove seeds, and chop finely.
  2. Make the Dressing: Squeeze lemon juice into a bowl (about 5 tablespoons). Combine with salt, pepper, and dried mint; mix well.
  3. Combine Ingredients: In a mixing bowl, add chopped tomatoes, cucumber, and onion. Pour dressing over the mixture and toss until combined.
  4. Finish with Olive Oil: Drizzle extra virgin olive oil over the salad just before serving and mix gently.
