  • 1 package yellow cake mix
  • 1 box (3.4 oz) instant pistachio pudding
  • 4 eggs
  • 1/4 cup vegetable oil
  • 2 tbsp water
  • 1 cup sour cream
  • 3/4 cup maraschino cherries (halved)
  • 2 cups powdered sugar
  • 22.5 tbsp milk
  • 1 tsp almond extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease two small loaf pans.
  2. In a large mixing bowl, combine yellow cake mix and pistachio pudding. Add eggs, oil, water, and sour cream; beat until smooth.
  3. Fold in halved maraschino cherries gently into the batter.
  4. Pour batter evenly into prepared loaf pans and bake for 35-40 minutes until a toothpick inserted comes out clean.
