  • 1/2 cup liquid glucose/light corn syrup

  • 6 Granny Smith apples (or 12 small apples)

  1. Prepare your baking sheet by greasing it with baking paper.
  2. Insert bamboo skewers into each apple and set aside.
  3. In a saucepan, mix sugar, water, corn syrup, and black food coloring over medium heat until dissolved.
  4. Stop stirring once dissolved and wash the pot's sides to prevent crystallization.
  5. Cook until reaching hard crack stage (150ºC/310ºF) or test using ice-cold water.
  6. Dip each apple into the caramel mixture and allow excess to drip off before placing on the prepared sheet.
  7. Let cool completely before serving.
