  • 2 Tbsp granulated sugar
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 1 1/2 cups whole milk
  • 1/2 cup pumpkin puree
  • 3 large eggs
  • 3 Tbsp unsalted butter (melted)
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 1/2 cup confectioners' sugar
  • 3 Tbsp maple syrup

Instructions

  1. In a blender, combine flour, sugar, salt, cinnamon, ginger, nutmeg, milk, pumpkin puree, eggs, melted butter, and vanilla extract. Blend until smooth.
  2. Let the batter rest for at least 30 minutes.
  3. Heat a nonstick skillet over medium heat and lightly grease it with melted butter.
  4. Pour about ¼ cup of batter into the pan, tilting to spread evenly.
  5. Cook for about 1 to 1½ minutes until golden brown; flip and cook for another minute.
  6. Repeat with remaining batter.
  7. For the filling, beat softened cream cheese with confectioners' sugar and maple syrup until smooth.
  8. Fill each crepe with the cream cheese mixture and serve warm.
