  • 1 (9-inch) spelt pie crust
  • 1 cup mascarpone cheese
  • ¼ cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup packed light brown sugar
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon freshly grated nutmeg
  • Pinch of cloves and coarse kosher salt
  • 1 (15 ounce) can pumpkin puree

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, beat mascarpone cheese, granulated sugar, and half of the eggs until smooth. Add vanilla extract, brown sugar, spices (cinnamon, nutmeg, cloves), salt, and pumpkin puree; mix until well combined.
  3. Pour the filling into the prepared spelt crust and smooth the top.
  4. Bake for about 1 hour and 15 minutes or until the filling is set but slightly jiggly in the center.
  5. Let cool at room temperature before serving. Optionally swirl some extra mascarpone on top before serving.
