  • 1/2 yellow onion, diced
  • 6 cloves garlic, minced
  • 16 ounces Italian sausage
  • 1 tablespoon Italian seasoning
  • 2 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 18 ounces refrigerated cheese/spinach ravioli
  • 2 cups fresh chopped spinach
  • 1 cup heavy cream
  • Kosher salt and fresh cracked pepper
  • Shaved Parmesan and fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Sauté diced onion with a pinch of salt and pepper for 3-4 minutes until translucent.
  3. Add minced garlic and Italian seasoning; sauté for another 30 seconds. Stir in tomato paste and cook for one minute.
  4. Add Italian sausage, breaking it apart as it cooks until browned.
  5. Pour in chicken broth and crushed tomatoes; add ravioli with salt and pepper.
  6. Simmer over medium-high heat, then reduce to low for about 3-5 minutes until ravioli is al dente.
  7. Stir in spinach and heavy cream; cook until spinach wilts.
  8. Taste and adjust seasonings; garnish with shaved Parmesan and parsley before serving.
