240 g stone-ground grits
960 ml chicken broth
240 ml heavy cream
2 red snapper fillets (about 170 g each)
225 g large shrimp, peeled and deveined
1 tablespoon Cajun seasoning
14 g unsalted butter
15 ml olive oil
2 garlic cloves, minced
60 g shredded cheddar cheese
Salt, to taste
Black pepper, to taste
Instructions
In a medium saucepan, bring chicken broth to a boil. Gradually whisk in grits, reduce heat, and cook uncovered for 20-25 minutes until thickened. Stir in heavy cream, butter, and cheddar cheese; season with salt and pepper.
In a large skillet over medium-high heat, heat olive oil and butter. Sauté minced garlic for about 30 seconds. Add shrimp coated in Cajun seasoning; cook until pink on both sides. Remove from skillet.
Pat dry red snapper fillets and season with Cajun seasoning. In the same skillet, cook snapper until golden brown on both sides; remove from skillet.
For the sauce, melt butter in the skillet, sauté garlic, add Cajun seasoning and chicken broth; simmer briefly before adding heavy cream and Parmesan cheese.
Serve by spooning grits onto plates topped with snapper and shrimp, drizzling with Cajun cream sauce.
