  • 500 g diced pumpkin
  • 2 garlic bulbs
  • 3 tbsp extra virgin olive oil
  • 2 cups small pasta
  • 3 cups chicken or vegetable stock
  • 50 g grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Cut the tops off the garlic bulbs and place them with diced pumpkin in a baking dish. Drizzle with olive oil, season with salt and pepper, and bake for 45 minutes until tender.
  3. In a large pot, squeeze the roasted garlic cloves into the pot, add the roasted pumpkin, chicken stock, and pasta.
  4. Bring to a boil, then reduce heat and simmer for about 15 minutes until pasta is tender. Stir in grated parmesan until melted.
  5. Serve hot with additional cheese on top if desired.
