  • 1 cup dark rum
  • 1 cup coconut rum
  • 1 ½ cups all-purpose flour
  • 10 oz sweetened coconut flakes
  • 2 large eggs
  • ½ cup coconut milk
  • Vegetable oil (for frying)
  • 4 oz cream cheese
  • ½ cup powdered sugar

Instructions

  1. Soak pineapple rings in dark and coconut rums for at least one hour. Drain and pat dry.
  2. Set up three bowls: one with flour, one with sweetened coconut, and another with whisked eggs and coconut milk.
  3. Coat each pineapple ring in flour, dip into the egg mixture, then roll in coconut flakes.
