  • 4 boneless, skinless chicken breasts, sliced into strips
  • 2 tbsp Cajun seasoning
  • 12 oz fettuccine pasta
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1/2 cup reserved pasta water
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Season chicken strips with Cajun seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high heat and cook the chicken until golden brown (5-6 minutes). Remove from skillet.
  2. In the same skillet, add chicken broth and heavy cream, scraping up browned bits. Simmer for 2-3 minutes until slightly thickened. Return chicken to coat in sauce.
  3. Cook fettuccine according to package instructions; reserve pasta water before draining.
  4. In the skillet, melt butter and sauté minced garlic for 1-2 minutes. Add reserved pasta water, season, and stir in Parmesan until thickened.
  5. Toss cooked fettuccine with sauce and chicken until well coated.
