  • 3 large sweet onions, sliced
  • 4 tbsp unsalted butter
  • 2 cups low-sodium beef broth
  • 2 tsp fresh thyme, chopped
  • 2 cloves garlic, minced
  • 1 ½ cups Gruyère cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, melt the butter and sauté the sliced onions until golden brown (15–20 minutes).
  3. Add garlic and thyme; cook until fragrant (1–2 minutes).
  4. Layer half of the sliced potatoes in the baking dish, followed by half of the onion mixture. Repeat layers.
  5. Pour beef broth over layers and top with shredded Gruyère cheese.
  6. Cover with foil and bake for 45 minutes; then uncover and bake for another 15 minutes until golden brown.
