  • 1/4 tsp cayenne pepper (optional)
  • Salt and freshly ground black pepper to taste
  • 1/4 cup olive oil
  • 2 tbsp butter
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 4 cloves garlic
  • 2 tbsp olive oil
  • 1/4 cup chopped fresh parsley
  • 1 lemon, zested
  • 1 large head of broccoli
  • 1/4 cup grated Parmesan cheese
  • Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 200°F.
  2. Set up a breading station with flour mixed with salt and pepper, beaten eggs, and the Parmesan mixture (cheese, Italian seasoning, garlic powder, paprika, cayenne).
  3. Coat each chicken piece in flour, dip in eggs, then coat in Parmesan mixture.
  4. Heat olive oil and butter in a skillet; cook chicken bites in batches until golden brown.
  5. For the garlic rice, sauté minced garlic in olive oil, add rinsed rice and broth; simmer until cooked through.
  6. Prepare broccoli by tossing florets in olive oil and cooking with garlic and broth until tender-crisp; sprinkle with Parmesan.
  7. Serve chicken bites over garlic rice with broccoli on the side.
