  • 1 ½ lbs boneless, skinless chicken thighs or breasts
  • 4 carrots
  • 3 potatoes
  • 2 celery stalks
  • 1 onion
  • 3 cloves garlic
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 4 cups chicken broth
  • 2 tbsp tomato paste
  • Salt and pepper to taste

Instructions

  1. Chop chicken into chunks and prepare vegetables: slice carrots, peel and dice potatoes, chop celery, dice onion, and mince garlic.
  2. Place all ingredients in the slow cooker: chicken, carrots, potatoes, celery, onion, garlic, thyme, rosemary, salt, pepper, tomato paste, and chicken broth.
  3. Stir everything to combine well.
  4. Cook on low for 6–7 hours or high for 3–4 hours until vegetables are tender and chicken is fully cooked.
  5. For a thicker stew, whisk flour with water and stir into the stew during the last 30 minutes.
  6. Add frozen peas in the last 15 minutes of cooking.
  7. Remove bay leaf before serving and enjoy hot.
