  • 2 1/4 tsp active dried yeast

  • 1/2 tsp kosher salt
  • 565g All-Purpose Flour
  • 100g Unsalted Butter
  • 850g diced apples
  • 30g Unsalted Butter
  • 80g Granulated Sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp Kosher salt
  • 1 Tbsp Corn starch
  • 125g Pecan Halves
  • 190g Unsalted Butter
  • 280g Brown Sugar
  • 2 Tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp Kosher salt
  • 115g Unsalted Butter
  • 225g Cream Cheese
  • 250g Powdered Sugar
  • 12 Tbsp Heavy Whipping Cream
  • 1/2 tsp kosher salt

Instructions

  1. Warm the milk and combine with sugar and yeast; let sit until foamy.
  2. Mix in eggs and salt, then gradually add flour to form a dough. Knead until smooth.
  3. Allow the dough to rise until doubled in size.
  4. Prepare the apple filling by cooking diced apples with butter and sugar until tender.
  5. Roll out the dough, spread butter, sprinkle with brown sugar mixture, and add apple filling.
  6. Roll into a log and slice into equal pieces; let rise again.
  7. Bake at 350°F (175°C) for 25-30 minutes until golden brown.
  8. Prepare frosting by mixing cream cheese with butter and powdered sugar; drizzle over warm rolls.
