  • 15.25 ounces corn (undrained)
  • 14.5 ounces diced tomatoes (undrained)
  • 14.5 ounces chicken broth
  • 4 ounces diced green chilies (undrained)
  • 1 ounce dry ranch seasoning
  • 1.5 teaspoons cumin
  • 1 tablespoon chili powder
  • 2 boneless, skinless chicken breasts (about 23 cups)
  • 8 ounces cream cheese (room temperature)

Instructions

  1. Rinse black beans under cold water and dice onion into small pieces.
  2. Cut the chicken breasts into smaller chunks.
  3. In the slow cooker, combine black beans, corn, diced tomatoes, chicken broth, green chilies, ranch seasoning, cumin, chili powder, and diced onion.
  4. Place chicken pieces on top of the mixture.
  5. Cover and cook on low heat for about 4 hours until chicken is fully cooked.
  6. Stir in room temperature cream cheese until melted and well incorporated.
  7. Serve hot with desired toppings like avocado or cilantro.
