  • 9 ounces Spanish chorizo (sliced)
  • 1 green bell pepper (chopped)
  • 1 yellow onion (finely chopped)
  • 4 garlic cloves (minced)
  • 1 carrot (chopped)
  • 2 tbsp double concentrated tomato paste
  • 1.7 pounds waxy potatoes (cut into bite-sized pieces)
  • 6 cups chicken broth
  • ¾ cup heavy cream
  • Seasonings: salt, black pepper, cumin, oregano, paprika, cayenne pepper

Instructions

  1. Prepare all ingredients by chopping vegetables and slicing chorizo.
  2. In a large pot, heat olive oil over medium-high heat. Sauté chorizo for 3 minutes until browned.
  3. Add bell pepper and cook for an additional 2 minutes. Stir in onion, garlic, and carrot; season with spices and cook for another 2 minutes.
  4. Mix in tomato paste and flour, followed by potatoes and chicken broth. Bring to a boil, then reduce heat to low and simmer for about 15 minutes until potatoes are tender.
  5. Stir in heavy cream and parsley; cook for another 3 minutes before serving.
