  • ⅓ cup neutral oil (vegetable, avocado, canola)
  • 1 cup milk or water
  • 4 large eggs
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1½ tbsp cocoa powder
  • ½ tsp vanilla extract
  • 12 oz dark cocoa candy melts
  • White nonpareils or sprinkles

Instructions

  1. Preheat your oven to 325-350°F (162-175°C). Prepare a baking pan.
  2. In a large bowl, mix the cake ingredients until well combined. Pour into the prepared pan and bake according to package instructions.
  3. Once baked, crumble the cake into a mixing bowl using a stand mixer or by hand after cooling slightly.
  4. Mix buttercream ingredients until smooth and combine with the crumbled cake.
  5. Roll the mixture into balls (about 1¼-inch) and chill for 15 minutes in the freezer.
  6. Insert lollipop sticks dipped in melted candy melts into each ball.
  7. Chill again for another 15 minutes before coating fully with melted candy melts.
  8. Tap off excess coating and decorate immediately before the coating sets.
