  • 1 cup homogenized milk
  • 1 teaspoon baking soda
  • 4 tablespoons butter
  • 1 cup dark brown sugar
  • 2 eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • Sea salt flakes
  • ½ cup butter (for caramel sauce)
  • 1 cup brown sugar (for caramel sauce)
  • ⅓ cup 35% cream (for caramel sauce)
  • ¼ teaspoon kosher salt (for caramel sauce)
  • Whipped cream (to serve)

Instructions

  1. Preheat the oven to 350°F and lightly butter an 11 x 8-inch casserole dish.
  2. Combine chopped dates and baking soda in a bowl. Scald milk in a saucepan, then pour over dates and let cool for 15 minutes.
  3. In a separate bowl, mix flour, baking powder, and salt. In a food processor, blend eggs, sugar, butter, and vanilla until combined. Gradually add dry ingredients followed by the date mixture.
  4. Pour batter into the prepared dish and bake for about 30 minutes until set.
  5. While baking, prepare the caramel sauce by melting butter with brown sugar and salt in a saucepan; stir in cream until thickened.
  6. After baking, poke holes in the pudding and drizzle with one-third of the caramel sauce. Let it rest for 15 minutes before serving with more sauce and whipped cream.
