  • 800g strawberry purée
  • 760g sugar
  • 20g pectin
  • 10g tartaric acid
  • 2 tsp Tabasco
  • 50g caster sugar (for coating)

Instructions

  1. In a large pan, mix strawberry purée with 720g sugar and bring to a boil over medium heat.
  2. In a separate bowl, combine pectin with 40g sugar. Once boiling, add this mixture gradually while stirring continuously.
  3. Heat until the mixture reaches 104ºC, then remove from heat and stir in tartaric acid and Tabasco.
  4. Line a baking tray with cling film or spray it with nonstick cooking spray; pour in the jelly mixture and refrigerate for at least 4 hours to set.
  5. Once set, cut into 2cm squares and roll each piece in caster sugar before serving.
