  • ½ cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 tablespoons pureed strawberries
  • 8 oz cream cheese, softened
  • 34 cups powdered sugar

Instructions

  1. In a medium bowl, beat the softened butter until smooth using an electric mixer. Add the egg and vanilla extract, mixing until well combined.
  2. Gradually incorporate the strawberry cake mix until fully combined. Chill the dough in the refrigerator for at least one hour.
  3. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  4. Scoop chilled dough into 2-inch balls and place them on the baking sheet, spaced apart.
  5. Bake for about 10 minutes or until slightly soft in the center. Allow cooling on the pan for a few minutes before transferring to a wire rack.
  6. For the filling, blend together pureed strawberries and softened cream cheese until smooth; gradually add powdered sugar to reach desired consistency.
  7. Spread filling on half of the cookie shells and top with remaining cookies to create sandwiches.
