Ingredients

  • cherry tomatoes (halved)
  • extra virgin olive oil
  • garlic cloves (sliced)
  • fresh basil leaves (julienned)
  • crushed red pepper flakes
  • salt
  • black pepper
  • dried angel hair pasta
  • vegan parmesan cheese
  • balsamic vinegar (optional)

Instructions

  1. Boil a large pot of salted water. Cook dried angel hair pasta until al dente according to package instructions. Reserve 1/2 cup of pasta water before draining.
  2. In the same pot, heat extra virgin olive oil over medium heat. Sauté sliced garlic until fragrant.
  3. Add halved cherry tomatoes, crushed red pepper flakes, salt, and black pepper to the pot. Cook until tomatoes are softened.
  4. Combine the drained pasta with the sauce in the pot, tossing well. Adjust sauce consistency with reserved pasta water if needed.
  5. Stir in julienned basil leaves and transfer to a serving bowl. Top with vegan parmesan cheese and drizzle with balsamic vinegar if desired.
