  • 12 oz. bowtie pasta
  • 1/2 cup olive oil
  • 1/3 cup red apple vinegar
  • 1 Tbsp Dijon mustard
  • 1 tsp dried oregano
  • 1 clove garlic, minced
  • 3/4 tsp salt
  • 1/4 tsp freshly cracked black pepper
  • 2 Roma tomatoes
  • 1 yellow squash
  • 1 zucchini
  • 1 broccoli crown
  • 1/2 red onion
  • 1 12oz. jar roasted red peppers
  • 1/2 cup chopped parsley

Instructions

  1. In a large mixing bowl, whisk together olive oil, red apple vinegar, Dijon mustard, oregano, minced garlic, salt, and pepper to create the vinaigrette.
  2. Cook the bowtie pasta according to package directions (7-10 minutes), then drain and rinse under cold water.
  3. Chop Roma tomatoes, yellow squash, zucchini, broccoli crown, parsley, and slice roasted red peppers and red onion into bite-sized pieces.
  4. Combine cooked pasta and chopped vegetables in the mixing bowl. Pour the vinaigrette over the mixture and toss gently until well coated.
  5. Serve immediately or refrigerate until ready to enjoy.
