  • 1 cup dark brown sugar (packed)
  • 3 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon cloves
  • 1 teaspoon salt
  • 1 1/4 cup evaporated milk
  • 1 tablespoon vanilla extract
  • 1 egg (for topping)
  • 1 tablespoon milk (for topping)
  • whipped cream (for serving)

Instructions

  1. Peel and chop sweet potatoes; boil until tender (about 20 minutes), then mash until smooth.
  2. For the crust, mix flour, salt, and sugar in a bowl. Cut in cold butter until crumbly. Gradually add ice water and lemon juice to form dough; chill for 30 minutes.
  3. Preheat oven to 350°F (175°C).
  4. In another bowl, combine mashed sweet potatoes with butter, dark brown sugar, eggs, spices, salt, evaporated milk, and vanilla; blend until smooth.
  5. Roll out chilled dough into a circle and fit into a pie dish.
  6. Pour sweet potato filling into the crust and bake for about 90 minutes or until set and edges are golden brown.
