  • 3 ancho peppers
  • 3 pasilla peppers
  • 3 New Mexican dried peppers
  • 2.5 pounds beef chuck (cut into bite-sized cubes)
  • 2 teaspoons cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium white onion (chopped)
  • 3 jalapeno peppers (chopped)
  • 2 serrano peppers (chopped – optional for extra heat)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock
  • 2.5 cups water
  • 2 tablespoons masa harina

Instructions

  1. Toast dried peppers in a dry pan for about 1-2 minutes per side until fragrant.
  2. Soak toasted peppers in hot water for 20 minutes until soft.
  3. Blend soaked peppers with some soaking water and salt until smooth; set aside.
  4. Season cubed beef with cumin, salt, and pepper.
  5. Sear seasoned beef in olive oil in a large pot until browned; set aside.
  6. In the same pot, cook chopped onions and jalapenos for about 5 minutes until softened.
  7. Add garlic and cook for another minute.
  8. Return seared beef to the pot along with chili paste; cook for an additional few minutes.
  9. Stir in beef stock, water, masa harina, and brown sugar; bring to boil then reduce heat.
  10. Cover and simmer on low heat for about 2 hours until beef is tender.
