  • 20 gyozas (or potstickers)
  • 1 tbsp vegetable oil
  • 4 garlic cloves (grated)
  • 1 tsp grated ginger
  • 4 cups chicken broth
  • 1 can (14 oz) unsweetened coconut milk
  • 1 tbsp low sodium soy sauce
  • 1 tbsp fish sauce
  • 1 tsp toasted sesame oil
  • 3 tbsp Thai red curry paste
  • 1 tsp brown sugar
  • 2 tbsp lime juice
  • Chopped chives (for serving)
  • Your favorite vegetables (optional, for serving)

Instructions

  1. Prepare ingredients: Boil salted water in a saucepan and grate garlic and ginger.
  2. Make the broth: Heat oil in a large pot, sauté garlic and ginger for 30 seconds, then add chicken broth, coconut milk, soy sauce, fish sauce, sesame oil, brown sugar, curry paste, and lime juice. Bring to a boil and simmer for 5 minutes.
  3. Cook gyozas: Add gyozas to boiling water; cook according to package directions (2-3 minutes). Drain.
  4. Serve: Divide gyozas into bowls and ladle hot soup over them. Top with chopped chives or your favorite veggies if desired.
