  • 75 g dark vegan chocolate (chopped)
  • 3 cups all-purpose flour
  • 2 2/3 cups granulated sugar
  • 1 1/2 cups unsweetened cocoa powder

  • 1 1/2 tsp sea salt
  • 3/4 tsp baking soda
  • 1 1/2 cups plant-based milk
  • 3/4 cup neutral oil (e.g., canola, avocado, rapeseed)
  • 1/4 cup white vinegar (or apple cider vinegar)
  • 1 tbsp vanilla extract
  • 75 g dark vegan chocolate (for frosting, chopped)
  • 1 cup vegan butter (room temperature)
  • 1/2 cup unsweetened cocoa powder (for frosting)
  • 5 cups confectioners' sugar, sifted
  • 24 tbsp plant-based milk (for frosting)
  • 1/4 cup canned coconut milk (for ganache)
  • 80 g dark vegan chocolate (for ganache, chopped)
  • 1/21 kg dark vegan chocolate (for decorations, chopped)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round baking pans.
  2. Melt chopped dark vegan chocolate in hot coffee until smooth.
  3. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, salt, and baking soda.
  4. In another bowl, mix plant-based milk, oil, vinegar, and vanilla. Combine with melted chocolate.
  5. Pour wet ingredients into dry ingredients; mix until just combined.
  6. Divide batter between prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  7. Cool cakes in the pans for 10 minutes before transferring to a cooling rack.
  8. Prepare frosting by beating together vegan butter and confectioners' sugar; add cocoa and plant-based milk until desired consistency is reached.
  9. Frost cooled cake layers and drizzle with ganache made from heated coconut milk poured over chopped dark chocolate.
