  • 1 onion (diced)
  • 3 garlic cloves (minced)
  • 2 stalks celery (or 1/2 small celery root, diced)
  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 4 cups vegetable broth (or water)
  • 1/3 cup dairy-free cream
  • Fresh parsley (to garnish)

Instructions

  1. Heat oil in a large pot over medium heat. Sauté diced onion for about 3 minutes until translucent. Add minced garlic, celery, carrots, potatoes, and spices; sauté for another minute.
  2. Pour in the vegetable broth; bring to a boil over high heat.
  3. Reduce heat to low and simmer for about 20 minutes until vegetables are tender.
  4. Blend half of the soup until smooth using an immersion blender; return it to the pot.
  5. Stir in dairy-free cream and let simmer for a few more minutes. Adjust seasonings if needed.
  6. Serve hot, garnished with fresh parsley.
