  • 2 1/2 quarts fresh wild blackberries
  • 4 1/2 cups granulated sugar
  • 1 box Sure-Jell (pectin)
  • 1 tsp butter

Instructions

  1. Prepare your workspace by gathering all tools and ingredients.
  2. Wash and inspect the blackberries thoroughly.
  3. In a large pot, cook the blackberries on medium heat with enough water to prevent burning for about 15 minutes until they break down.
  4. Strain the juice using a tight knit strainer, ensuring you capture maximum liquid while discarding pulp.
  5. Measure out 3 3/4 cups of blackberry juice; add water if necessary but avoid diluting too much.
  6. Combine the blackberry juice with Sure-Jell and butter in a large pot, bringing it to a full rolling boil while stirring continuously.
  7. Add sugar to the boiling mixture and return to a full boil for one minute while stirring constantly.
  8. Carefully fill jars using a ladle and funnel, then seal tightly with lids and rings.
  9. Process jars in a water bath for 10 minutes or allow them to seal naturally.
