  • 1/2 cup frozen peas
  • 1/2 cup diced bell peppers
  • 2 green onions
  • 2 cloves garlic
  • 1 tbsp ginger
  • 2 cups cooked jasmine rice
  • 2 tbsp vegetable oil
  • 3 tbsp soy sauce
  • 2 tbsp sweet chili sauce

Instructions

  1. Prepare all ingredients: chop chicken into bite-sized pieces, dice bell peppers, mince garlic and ginger, and break up any clumps in day-old rice.
  2. In a wok or large skillet over medium-high heat, add vegetable oil. Sear chicken for 5-7 minutes until golden brown, then set aside.
  3. Stir-fry minced garlic and ginger for about 30 seconds until fragrant.
  4. Add bell peppers and frozen peas; stir-fry for 2-3 minutes until tender yet crisp.
  5. Return chicken to the wok, add cooked rice, soy sauce, and sweet chili sauce; mix well until combined.
