  • 2 Tbsp avocado oil
  • 1 cup diced boneless skinless chicken breast
  • 1/2 cup diced yellow onion
  • 2 cloves garlic (minced)
  • 1 tsp minced fresh ginger
  • 1 cup fresh pineapple chunks
  • 3/4 cup frozen peas and carrots (thawed)
  • 3 cups cooked jasmine rice
  • 2 Tbsp reduced sodium soy sauce
  • 1 Tbsp plant-based oyster sauce alternative
  • 1 tsp toasted sesame oil
  • Diced green onions for garnish

Instructions

  1. Heat 1 tablespoon of avocado oil in a wok over medium-high heat.
  2. Add diced chicken, season with salt and pepper, and cook until browned (5-7 minutes). Remove and set aside.
  3. In the same skillet, add the remaining avocado oil, followed by onion, garlic, and ginger. Sauté until fragrant (about 2 minutes).
  4. Stir in pineapple chunks along with the thawed peas and carrots until heated through.
  5. Add cooked jasmine rice to the skillet with soy sauce, plant-based oyster sauce, and sesame oil. Mix well.
  6. Return the cooked chicken to the skillet, combining everything thoroughly for another 2-3 minutes.
  7. Serve garnished with diced green onions.
