  • 500 g all-purpose flour
  • 10 g salt
  • 50 g sugar
  • 10 g yeast
  • 250 ml cold water
  • 50 g softened butter
  • 250 g cold butter slab
  • 120 g 70% dark chocolate batons
  • 1 egg (for egg wash)

Instructions

  1. Combine flour, salt, sugar, and yeast in a bowl; add cold water and softened butter to form a shaggy dough. Knead until smooth.
  2. Wrap the dough in plastic wrap and refrigerate for 1 hour. Prepare the cold butter slab by flattening it between parchment paper.
  3. Roll out the dough to enclose the butter slab, fold, and chill. Repeat this process for three turns.
  4. Roll chilled dough into a rectangle and cut into rectangles; place a chocolate baton at one end of each piece.
  5. Roll tightly around the chocolate and proof until puffy.
  6. Brush with egg wash, bake at 200°C (400°F) for 15-18 minutes until golden brown.
