  • 625 g all-purpose flour
  • 10.5 g active dry yeast
  • 312.5 ml warm milk
  • 37.5 g granulated sugar
  • 12.5 g salt
  • 312.5 g unsalted butter (cold)
  • 5 eggs (beaten) for egg wash

Instructions

  1. Activate yeast by mixing warm milk with yeast and letting it sit until frothy (5-10 minutes).
  2. In a mixing bowl, combine flour, sugar, and salt; add yeast mixture and mix until a dough forms.
  3. Knead the dough on a floured surface until smooth (8-10 minutes).
  4. Chill the dough wrapped in plastic for at least 1 hour.
  5. Prepare cold butter into a flat rectangle between parchment sheets; refrigerate.
  6. Roll out chilled dough into a rectangle; place cold butter inside and fold like an envelope.
  7. Roll out again and fold two more times to laminate.
  8. Shape croissants by cutting triangles from the final rolled-out sheet and rolling from base to tip.
  9. Proof on a lined baking sheet until doubled in size (1-2 hours).
  10. Preheat oven to 200°C (400°F); brush with egg wash and bake for 15-20 minutes until golden brown.
