  • 1/4 tsp salt

  • 6 TBSP unsalted butter (room temperature)
  • 1/2 cup white granulated sugar
  • Zest of a small lemon
  • 3/4 tsp pure vanilla extract
  • 2 large eggs (room temperature)
  • 1/2 cup sour cream (room temperature)
  • 1 lb strawberries (rinsed, dried, and cut into small cubes)
  • 2 TBSP white granulated sugar
  • 4 oz cream cheese (room temperature)
  • 3/4 cup powdered sugar (sifted)
  • 1 cup heavy cream (cold)

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine all-purpose flour, cornstarch, salt, baking soda, and baking powder. Mix well.
  2. In another bowl, use an electric mixer to cream together unsalted butter and white sugar until light and fluffy. Add lemon zest and vanilla extract; mix well.
  3. Beat in eggs one at a time until fully combined. Incorporate sour cream into the mixture until smooth.
  4. Gradually add dry ingredients to the wet mixture; mix until just combined. Pour batter into a greased baking pan and bake for 15 minutes or until golden brown.
  5. In a medium bowl, mix cut strawberries with white granulated sugar. Let them sit for about 10-15 minutes to release their juices.
  6. In another bowl, beat room temperature cream cheese until smooth using an electric mixer. Add vanilla extract and powdered sugar; mix until well combined.
  7. In a separate bowl, whip cold heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture until blended.
  8. Start with a layer of lemon cake at the bottom of your trifle dish or glasses. Add a layer of strawberries followed by a layer of whipped cream cheese mixture.
  9. Repeat layering until all ingredients are used up, finishing with whipped cream on top. Chill in the refrigerator for at least an hour before serving for best results.
