  • 2 eggs, beaten
  • 2 tablespoons oil (vegetable or sesame)
  • 2 tablespoons green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients by chopping chicken and vegetables.
  2. Heat oil in a wok or large skillet over medium-high heat.
  3. Scramble the beaten eggs until fully cooked; set aside.
  4. Add mixed vegetables to the skillet and stir-fry for about 3–4 minutes.
  5. Combine cooked rice and diced chicken with the vegetables; stir well.
  6. Drizzle soy sauce over the mixture and heat through; add scrambled eggs back into the pan along with salt and pepper.
