  • 1 lb boneless skinless chicken thighs
  • 1 cup fresh pineapple (cut into chunks)
  • 1 small red onion (sliced)
  • 1 large carrot (shredded)
  • 1 whole avocado (sliced)
  • 1 cup baby cucumbers (sliced)
  • 2 stalks spring onions (chopped)
  • 2 cloves grated garlic
  • 1 tbsp grated ginger
  • 1 cup cooked edamame beans
  • 3 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp apple vinegar
  • 1 tbsp tomato paste
  • 2 tbsp pineapple juice
  • 1 tbsp sriracha
  • 1 tbsp sesame oil
  • 1 tbsp toasted sesame seeds
  • 2 tbsp light mayo

Instructions

  1. Cook jasmine rice according to package directions until fluffy.
  2. In a mixing bowl, whisk together garlic, ginger, soy sauce, maple syrup, apple vinegar, tomato paste, pineapple juice, sriracha, and sesame oil.
  3. Marinate chicken thighs in the sauce for at least 20 minutes.
  4. Preheat oven to 400°F (200°C). Bake marinated chicken in a baking dish for about 20 minutes until fully cooked; let rest before slicing.
  5. Assemble poke bowls by layering rice, sliced chicken, pineapple chunks, shredded carrot, avocado slices, cucumber slices, edamame beans, and red onion.
  6. Drizzle with light mayo and sprinkle with toasted sesame seeds before serving.
