Ingredients

Scale
  • 1.5 lbs chicken breast (cut into bite-sized pieces)
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 onion (sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons honey
  • 1 tablespoon sriracha sauce
  • 1 tablespoon olive oil
  • Fresh cilantro (for garnish)

Instructions

  1. Prepare the jasmine rice by combining it with water in a medium saucepan. Bring to a boil, then cover and simmer on low for about 15 minutes until cooked.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken pieces with salt and pepper and cook for 6-8 minutes until browned.
  3. Remove the chicken from the skillet; add minced garlic and grated ginger, sautéing for about 1 minute. Add sliced onions and bell peppers, cooking until tender-crisp.
  4. In a bowl, whisk together soy sauce, honey, and sriracha; pour into the skillet with vegetables. Return the chicken and add pineapple chunks, cooking for an additional 2-3 minutes.
  5. Serve hot over jasmine rice and garnish with fresh cilantro.
