  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter (room temperature)
  • 3 cups all-purpose flour
  • 1/2 cup chilled unsalted butter (for layering)

Instructions

  1. Activate the yeast by mixing warm milk, yeast, and sugar in a bowl; let sit until frothy.
  2. In a separate bowl, whisk flour and salt; form a well and add the yeast mixture along with room-temperature butter. Mix until combined.
  3. Knead on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for about 1 hour.
  4. Prepare the butter layer by pounding chilled butter between parchment sheets to form a rectangle; refrigerate.
  5. Roll out the dough to a rectangle and place the butter layer in the center. Fold over, seal edges, and roll out again; repeat folding process three times with chilling intervals.
  6. Shape croissants by cutting triangles from rolled dough and rolling from base to tip. Place on a parchment-lined baking sheet.
  7. Proof for another hour, then preheat oven to 400°F.
  8. Brush with egg wash made from egg and milk before baking for 15-20 minutes until golden brown.
