  • 1/2 cup unsalted butter (cold)
  • 1/4 cup whole milk (warm)
  • 2 tablespoons sugar
  • 1 teaspoon active dry yeast
  • 1 teaspoon salt

Instructions

  1. In a large bowl, combine flour, sugar, salt, and yeast. Gradually add warm milk while stirring until a shaggy dough forms. Knead on a floured surface until smooth.
  2. Flatten cold butter between parchment sheets into a rectangle; chill until firm.
  3. Roll out the dough into a rectangle twice as long as wide. Place chilled butter on one half and fold over to encase it. Roll out again and fold into thirds three times to laminate.
  4. Cut triangles from the dough and roll each triangle from base to tip to shape croissants.
  5. Place shaped croissants on lined trays to proof until doubled in size (about 1 hour).
  6. Preheat oven to 400°F (200°C) and bake for 15-20 minutes until golden brown.
