  • 1 tablespoon oil
  • 1 pound boneless, skinless chicken breast (diced)
  • Salt & pepper
  • 1 onion (cut into wedges)
  • 1 can (8 oz) pineapple chunks in juice (not drained)
  • 1/2 cup BBQ sauce
  • 1 red pepper (diced)
  • 1 yellow pepper (diced)
  • 1 cup white rice
  • 1 cup water

Instructions

  1. Set the Instant Pot to sauté, add oil, and brown the diced chicken seasoned with salt and pepper for about 3-4 minutes. Stir in onion and cook for another minute.
  2. Add pineapple with juice, BBQ sauce, and diced peppers to the pot, scraping any browned bits off the bottom.
  3. Place the trivet over the chicken mixture. In an oven-proof dish suitable for the Instant Pot, combine rice, water, oil, and salt; place it on top of the trivet.
  4. Close the lid, set the valve to sealing, and pressure cook on high for 2 minutes. Allow natural pressure release for 10 minutes before manually releasing any remaining pressure.
  5. Fluff the rice with a fork after removing it from the pot. For a thicker sauce, mix remaining BBQ sauce with cornstarch and water; sauté in the Instant Pot until thickened.
