1 lb chicken breast, cubed
2 tbsp olive oil
2 cloves garlic, minced
½ cup soy sauce
⅓ cup pineapple juice
2 tbsp honey
1 tbsp rice vinegar
1 tsp cornstarch + 1 tbsp water
1½ cups cooked rice
1 cup pineapple chunks
½ red bell pepper, diced
¼ cup green onions, chopped
Optional: sesame seeds, chili flakes
Instructions
1. Heat olive oil in a skillet over medium-high heat. Sauté cubed chicken until browned and cooked through. Remove from pan.
2. In the same skillet, add minced garlic and sauté briefly before adding soy sauce, pineapple juice, honey, and rice vinegar. Simmer gently for 5 minutes.
3. Stir in cornstarch mixed with water to thicken the sauce.
4. Add cooked chicken back to the skillet along with pineapple chunks and diced red bell pepper; coat everything in the sauce.
5. Mix in cooked rice until heated through.
6. Garnish with chopped green onions before serving.
